This stage lends itself perfectly as a backdrop for a catering project that accompanies diners on a path made of discovery - through the proposals of its cuisine playful - and, at the same time, a return to the origins and the most ancestral flavors, those that enhance quality and authenticity of the raw material, whose name already reveals its essence.
Starting from the axiom that names shape the reality of things, expressing their substance, Fusco has decided to introduce in his cuisine grill cooking, which allows products - be they meat, fish or vegetables - to express all their fragrance through extreme attention to cooking, designed to enhance their nutritional properties, aromas and flavors: in a return to the most ancestral cuisine , at a time when there is nothing more to invent, what is necessary to look at is precisely the heart of things. This is why Nomina's grill plays a prominent role in the menu, designed to accompany guests in the rediscovery of flavors that are often forgotten, precisely because they are sometimes made too articulate. In the simplicity of essential cooking, authentic taste returns to center stage, in dishes based on the catch of the day or fine cuts of meat whose quality needs no frills to be understood by all. With fun, light-heartedness, lightheartedness and a playful approach, the result of the great experience gained over a long career, Andrea Fusco is getting back into the game with a new, important project in the brand new cuisine of Nomina.
The chef has a great cultural baggage accumulated over his years of experience: from the Michelin star he won in 2010 with his famous Giuda Ballerino! to moving to one of the most beautiful terraces in Rome, on the eighth floor of the hotel at the Bernini Bristol in Piazza Barberini, to consultancies around the world, the Roman chef has honed the knowledge in the culinary field that now constitutes the hand with which he paints his dishes, always with fun and lightness.
Not surprisingly, next to the grill, Nomina presents a selection of signature dishes that tell the story of the journey the chef has made, his profound mastery of ingredients and how he has managed to transform all this into valuable tools to continue experimenting without ever losing the desire to play. Because yes, food is a very serious thing, but at the same time, because of its ability to succeed in bringing people together around a table, we must never lose sight of the fact that it can and must also be an opportunity for joy and fun. This is how Andrea Fusco interprets it, through a menu that is rich, cheerful, playful and sunny but firmly rooted in the concreteness and essence of the products of which it is composed.
